Bhindi Do Pyaza or bhindi masala is a famous North Indian
dish. Its easy to make and is a delight for every kid. Double the onions and
medium spices and a dash of lemon juice surely make this Bhindi Do Pyaza very
flavorful. It goes very well with chapatti, nan or roti.

Ingredients
- Bhindi / Okra / Lady finger – 250gms cut into medium pieces
- Tomato – 2 medium
sized chopped into small pieces - Onion – 2 medium sized cubed
- Hing / Asfotedia – 1pinch
- Ajwain / Carom seeds – ½ tsp
- Red Chili Flakes- ½ tsp
- Roughly crushed dhania
/coriander – 1tsp - Turmeric / Haldi powder –
½ tsp - Red chili powder – 1 tsp
- Ginger / Sunth powder – ½
tsp - Kasuri methi – 1tsp
- Lemon Juice – ½ tsp
Method Of Preparing
- Heat oil in a
pan on medium heat. - Once oil is
hot, add the chopped bhindi. - Sauté at low
medium heat for 5 – 7 minutes. - Remove bhindi
from pan and set aside. - In same pan
add cubed onion, cook on low-medium heat for 4-5 minutes. - Remove onion
from pan and set aside. - Heat 1 tablespoon
oil in the same pan. Add hing, ajwain, chili flakes, roughly crushed dhania, haldi,
chili powder and ginger powder. - Add chopped
tomatoes, salt, ginger powder and kasuri methi. - Stir until all the ingredients get well combined. Cover the pan with the
lid and cook till tomatoes and oil separates. - Add fried bhindi, cubed onions and mix well all the ingredients.
- Cover the pan with the lid. Keep the heat on low medium flame and let it
cook for 4-5 minutes more. - Ensure to keep stirring it few
times in between so it gets cooked evenly. - Add lemon juice and mix.
- Serve hot with roti, phulka or any bread of choice.
